Ok this is simple.
Jackie Chan would win.
Jackie is fearless; he has been doing the most dangerous stunts in cinematic history for over 35 years now. He rarely uses a stuntman, and always performs the "big stunt".
Jet Li uses a stuntman for most of the dangerous stunts/moves performed in his movies.
The reality of the situation is that one man has proved throughout his career that he is actually willing to face danger and the other man has proved he is more interested in fictionalized "danger".
Jackie may play a clown, but he is the tougher man. Jet Li, is amazingly talented, but nothing in his career has shown that he is willing to face death. Jackie faces death as a career.
Jackie would win... easily.
